It's My Wife's Fault
My wife left before sunrise without reminding me I was supposed to smoke two pork butts for dinner. How am I meant to remember a tiny detail like that all on my own? I remembered at eleven. Eight hours of smoking later, the first thing my son said at dinner was, where's the burgers? Of course.
It's my wife's fault. She (along with J and W) ran off at 06:45, headed to church, to help with some organizing work, or some such. She left me at home without any specific reminder that I'm supposed to be smoking pork butts today for dinner. How am I supposed to remember some tiny detail like that all on my own?? Ridiculous.
I remembered at 11am, all on my own. Whoops.
I got the pork butts out of the garage fridge, opened, rinsed and patted dry. I got out the aluminum pans, whipped up the dry rub, researched whether it was fat-side-up or fat-side-down when smoking (it's been a while), found and opened a new yellow mustard, finished prepping them and got them into the smoker which had been pre-heating this whole time. 11:30am.
I was so incredibly late to the game that it's not like being efficient with my time now was really going to make any difference, but I tried.
